Hand Brewing Guide

Step One

1. Weigh the coffee powder

Pour the coffee powder into a measuring cup, referring to the scale line on the cup body to obtain the appropriate amount of coffee powder.  

Step Two

2. Plaited paper filter

Fold the press part of the paper filter towards the back.

Step Three

3. Place the paper filter

Attach the paper filter to the filter cup.

Step Four

4. Smooth the coffee powder

Pour the coffee powder into a strainer and gently pat the sides of the strainer so that the coffee powder is evenly stacked and the surface is as flat as possible.

Step Five

5. Stuffy steamed

Put the spout of the kettle close to the coffee powder and pour in hot water as slowly and steadily as possible. First, pour water into the center of the coffee powder. When foam or expansion occurs, expand from inside to outside in a circular shape until the water is cut off 1CM away from the edge of the paper filter.

PS: Reference time

(1) 10g powder: steam water for about 10 seconds, 20 ml of water; Cut off the water until the end of steaming for about 30 seconds.
(2) 20g powder: steam water for about 15 seconds, 40 ml of water; Cut off the water until the end of steaming for about 30 seconds.

Step Six

6. Multiple water injection

Stuffy after steaming, in the central position of 2 to 3 cm above the ground coffee, fine began to slow and stable water injection, is also from the inside out of the shape of a circle, each time to a maximum of bubbles in the water injection time (and often the water close to the edge of the filter paper), stop water injection, waiting for the foam or coffee powder recovery flat, again began to water injection. Due to different cooking conditions, the number of water injection may be different, usually 3-4 times of water injection.

PS:Reference time
A: 1 serving / 10g: Water 160 mL twice, about 120 seconds.
B: 2 servings / 20g: Add 320 mL of water 3 times for about 150 seconds.

Step Seven

8. Stop pouring

When the water level is close to the mark on the glass pot, stop filling. When the water level reaches the mark (with or without coffee liquid), remove the filter cup and place it on the filter holder.
